Swedish Pancakes (R&D Kitchen)

Swedish Pancakes 


M - You can find me at the Original Pancake House quit often. 9 times out of 10 I order the "Swedish Pancakes" (commonly known as crepes in other establishments). Instead of spending $8.50 + tax +a tip, I can make it at home for pennies on the dollar. 
W -  If they aren't filled with raspberry jam, they have no place on my plate. Ill provide you with a spot on recipe below! 

Super easy and super delicious.

Swedish Pancakes 
1 cup of flour
1/4 cup of sugar
2 pinches of salt
1 cup of milk
4 eggs
1-2 tablespoons of melted butter

Mix and combine dry ingredients in a small bowl. Combine milk and eggs in large bowl. Once combined, slowly whisk in dry ingredients. Add butter and with an electric mix beat until smooth.

Heat medium lightly buttered skillet to medium high and add 1/3 cup of batter. Immediately twirl pan to spread evenly in a perfect circle across the bottom. Once the middle of the crepe has bubbled and the edges begin to become a golden brown flip to cook other side. Check until you receive a light golden brown on both sides and transfer to a serving plate.

Raspberry Jam
Serve with your favorite fruit, butter, sugar, jam, nutella, or they can be stuffed with savory ingredients if desired. Below I've provided you with a killer Raspberry Jam recipe. 

Use a very large pot.
When the jam reaches a full rolling boil it will double in volume.
Heat mashed berries until they reach a full rolling boil.
Boil 2 minutes.
Add sugar.
Stir well.
Bring to a boil, stirring constantly, boil for 2 minutes.
Remove from heat.
Beat with rotary beater for 4 minutes
Pour in sterilized jars and seal.
